3 bell peppers
1 Tb olive oil
1 clove garlic, minced
1 Tb balsamic or red wine vinegar
Salt & pepper

Remove stems, seeds, and ribs from peppers. Cut into strips. Heat oil in large skillet over med-high heat. Add garlic; cook until golden. Add peppers; stir and cook until crisp-tender, 3-4 mins. Sprinkle with vinegar, salt, and pepper. Makes 4 servings.
