1 lb cabbage, sliced thinly
3 shallots minced
1 tart apple, diced
4 oz bacon
1 pint chicken stock
1 cup light cream
3 Tb butter
salt and pepper

Cook the bacon and remove from pan. Remove all but 3 Tb of the fat. Sweat the shallots (cook without browning). Add the cabbage and the stock. Add cream, bacon, apples, and reduce. Season with salt and pepper.
