1 Tb oil
1 onion, sliced thing
1 poblano pepper, sliced
1 14 oz. can crushed tomatoes
1/2 lb fresh spinach
1/4 cup peanut butter
Salt and pepper to taste

Sauté onions and peppers until soft. Add the tomatoes and spinach. Cover and cook, stirring occasionally until the spinach is wilted. Remove lid, let some of the liquat evaporate. Stir, season to taste.
