2 lb. okra
3 tbsp. oil
1 tbsp. flour
1 med. onion, chopped
1/2 green bell pepper, chopped
2 med. stalks celery, chopped
5 fresh tomatoes or 1 lg. can
Tony’s Creole Seasoning or salt & pepper
Wash okra, cut and fry in 2 tablespoons oil until it is not sticky (do not use black iron pot).In another skillet make a medium dark roux with 1 tablespoon oil and 1 tablespoon flour. Add chopped onion, bell pepper and celery and simmer until wilted. Add tomatoes and simmer for 5 minutes. Add okra, season well with Tony’s Creole Seasoning or salt and pepper, and turn fire down low. Cook for 1 hour. (Serves 6.)

NOTE: Can be frozen for later use. Ideal for gumbos.
