4 Cloves (or more) Fresh, Sweet Elephant Garlic–thinly sliced and lightly sauted until tender but not brown
3/4 cup Sweet Onion–thinly sliced
1 1/2  lbs. Fresh Green Beans–tipped and tailed
3 to 4 Tablespoons Olive Oil–for roasting beans

Dressing:
1/3 Cup Parmesan Cheese
5 to 7 Tablespoons Olive Oil
2 to 4 Tablespoons Lemon Juice
1 Teaspoon Lemon Zest (finely-grated lemon peel)
Sea Salt & Pepper

Place onions and green beans in a large bowl. Toss with olive oil and liberal grindings of pepper to taste. Place in a foil-lined baking sheet. Bake at 400 to 425 degrees for 20 to 30 minutes until crisp-tender and lightly browned. Vigorously whisk all dressing ingredients. Toss in a bowl with roasted green beans and garlic. Adjust lemon juice to taste. Finish with some coarse Kosher or sea salt.
