2 lb medium Yukon Gold potatoes
1/4 cup fresh lemon juice
4 garlic cloves, minced
3/4 cup chopped fresh basil
1 Tb Dijon mustard
1 teaspoon salt
1/2 teaspoon pepper
2/3 cup olive oil
Optional: 10 thick bacon slices, cooked and cut into 1-inch pieces.

Cook potato in a dutch oven in boiling water for 30 minutes or until tender, drain and cool. Peel and cube potato. Whisk together lemon juice and next 5 ingredients in a large bowl; whisk in oil in a slow, steady stream. Add potato, gently toss to coat. Serves 6-8.
