Feel free to add whatever you have in your drawer.

Olive oil to coat stock pot
Cloves of garlic, minced
1/2 onion, minced
Favorite vegetable stock
1-2 bay leaves
Leftover hard veggies, chopped to bite size (turnips, broccoli, cabbage, beets, etc)
Leftover greens, chopped (kale, chard, collards, bok choi, lettuce, etc)
Leftover mysteries (meat, beans, pasta, potatoes, stuff that isn’t hairy)

Sauté first three ingredients in stock pot. Add leftover hard veggies, sauté about 10 minutes. Add plenty of vegetable stock and bay leaves, simmer 20 minutes. Add leftover greens, simmer 10 minutes. Add leftover mysteries, simmer 5 minutes. Season with herbs/spices. Garnish soup with cheese, crumbs, or more herbs.
