One pound ground lamb
Salt & pepper to taste
Tagine spices or curry powder, to taste (about 1 teaspoon)
2 ounces goat cheese

Combine lamb with spices and form into four balls.
Put about 1/2 ounce of goat cheese (about 1 tablespoon) in the center of each ball and then form a patty, surrounding the cheese with the ground meat. Grill and serve on a toasted bun with traditional condiments, or in pita pockets with chutney.

Serves four.
