1/2 cup milk (or 1 beaten egg + 1/4 cup water)
1/2 cup cornmeal or flour
1.25 tsp salt
1/4 tsp black pepper
4 green tomatoes, cored and cut into 1/4 inch slices
Line a plate with paper towels. Put wet ingredients in a bowl, and dry ingredients in another. Fill a skillet with 1/4 inch cooking oil. Add high heat for 3 minutes or until it starts to smoke. Dip tomatoes into milk or egg, then cornmeal/flour. Cook 3-4 minutes until golden. Place tomatoes on plate, season and serve.
