3 hard boiled Green Gate Farms eggs
1 Tb mayo or yogurt
1 Tb mustard
2 Tb onion scapes (chopped like scallions and sautéed)
Salt/pepper to taste
Optional parsley, fennel, or other herb
Spinach and bread

Peel eggs. Chop or mash together with mayo and mustard. Stir in onion scapes, salt, pepper. Place spinach on slice of bread and top with egg salad.
