3 ripe tomatoes
2 scallions, chopped
1/4, teaspoon sugar
3 tablespoons chopped cilantro
salt

Remove the tough cores from the tomatoes with a small, sharp knife. Halve the tomatoes, remove the seeds and dice the flesh. Combine the tomatoes with the scallions, sugar, chopped cilantro and salt. Serve at room temperature. Serves 4
