1 pound yellow beets
2 tablespoons orange juice concentrate (undiluted)
2 tablespoons sherry vinegar
salt and pepper

Roast, steam, or boil beets until tender. Cool, peel, and slice them. Toss with sherry vinegar and orange juice
concentrate. Season to taste with salt and pepper. Makes 4 servings.
