1/4 cup chopped onion
4 large tomatoes, chopped
1 tsp sugar

Dumplings:
1 egg, lightly beaten
2 tablespoons oil
1 tablespoon minced fresh basil, or 1 tsp dried
1 tsp salt
2 medium zucchini, peeled and cubed
1 cup grated cheese

Sautee onion until tender. Add tomatoes, basil, sugar, salt & pepper. Cover, simmer 20 minutes. Add zucchini and continue to cook until tender. Combine eggs and cheese. Drop by 1 tablespoon at a time, onto tomatoes, cover; simmer until dumplings are firm (about 5 minutes).
Serves 6.
