2 medium zucchini
3 yellow squash
1 patty-pan squash
1 medium onion, sliced
1 tsp salt
1tsp sugar
1/2 tsp sweet basil, more if fresh
2 tomatoes
1 cup grated cheese

Slice squash and place with onion in a heavy sauce pan. Add salt, sugar, and sweet basil. Cover and cook on moderate heat for 5-8 minutes or until onion is translucent and squash is crisp and tender. Stir occasionally to eliminate sticking. Remove the cover the last few minutes to evaporate any liquid. Spoon into a 2-quart casserole sprayed with Pam. Dot with butter. Tuck tomato slices in among squash, sprinkle with cheese, and bake in a 325 degree oven for 10 minutes. Serve immediately.
