1 large eggplant, cut into 6 wedges
2 Tb vegetable oil
1 large green onion, cut into 2-in pieces
2 cloves garlic, minced
3 Tb soy sauce
1/4 tsp sugar
pinch of pepper

Steam eggplant until tender, about 30 minutes. Heat oil in wok or large skillet. Stir-fry green onion 1 minutes. Add remaining ingredients. Stir-fry 3 more minutes. Makes 3-4 servings.
