1- 1 1/4 lbs sweet potatoes, peeled and cut into 1-in chunks
2 Tb canola oil
2 Tb bottled Cajun seasoning
Heat oven to 400. Toss potatoes with oil and seasoning. Spread in a single layer on a baking sheet. Roast until cooked through and browned in spots, about 25 minutes. Makes 2-4 servings.
