Favorite herb (parsley, cilantro, etc) chopped
1.5 tsp Dijon mustard
2.5 Tb red wine vinegar
3/4 tsp salt
5 Tb extra virgin olive oil
Sugar to taste (optional)
In a small bowl, whisk together mustard, vinegar, and salt. When combined, add oil in a slow stream. Whisk until blended.
In a large bowl, toss shredded cabbage, chopped herb, vinagarette and salt and pepper to taste. Cover and chill for up to two hours.
