1 mutton breast (ribs), trimmed
2 Tb kosher salt
2 Tb coarse ground black pepper
2 Tb cup paprika
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon granulated garlic
1/2 tablespoon cayenne

Preheat your smoker to 375 degrees F. Combine the salt, pepper, paprika, chili powder, cumin, garlic, and cayenne and blend well. Sprinkle the mutton breast all over with the rub and rub it in. Place on your smoker and cook indirectly for 4 to 5 hours until done, turning every 1-1/2 hours. The ribs are done when you can take two side-by-side ribs and tear them apart easily.
