This recipe is also great for sliced eggplant, green tomato, or onions.

4-6 squash
1 cup whole wheat flour
1-2 tsp thyme
1/2 tsp curry powder
1/2 tsp dried oregano
1/2 tsp salt
1/2 cup safflower oil
1 cup tomato juice

Heat oven to 400. Oil large baking dish. Slice squash lengthwise or 1/8 inch thick. Season with salt and  pepper. Place in dish overlapping layers. Combine remaining ingredients and spread on top. Bake until lightly browned, about 20-25 minutes.
