4 red onions (do not peel)
A few sprigs of rosemary or basil
1/4 cup olive oil
1.5 Tb balsalmic vinegar
1 Tb packed brown sugar
2 Tb red wine vinegar
3/4 cup vegetable stock
Salt and pepper

Preheat oven to 375. Use a sharp knife to slice base of onions. Slice thin layer off the top, then 1/2 inch slit in center. Insert herb. Place in baking dish.
In a small bowl, stir in all other ingredients. Pour over onions, bake an hour or so, baste a few times. Ready when soft. Split skins and serve.
