FIELD NOTES

katiefarmstandIts looking like Texas summer is finally on its way. Temperatures are supposed to be in the high 90’s this week and possibly hit the triple digits early next week. That means fewer and fewer crops are thriving, and more and more are starting to shrivel and wilt under the scorching sun. Luckily we’ve made it this far through the season with relatively mild temperatures.

So as our summer winds down and we struggle to get all of the drip tape out of the fields we are also ordering more seeds and getting prepared to start more cool weather crops. We’ll be starting kale and broccoli as soon as we get seeds in, and a little later in the summer we’ll get some other fall favorites going such as cabbage, cauliflower, and kohlrabi. We’re still a ways off from seeing root vegetables again, but if summer continues to fly by this quickly fall will be here in no time.
This week we’ve got a few things left that can still stand the heat. You’ll see more sweet peppers, cucumbers, and squash. We’re still working through our mass of stored potatoes and shallots as well.

Summer Vegetable Tian: This recipe can be a side dish or a main dish depending on portions, either way it’s a delicious dish.
Baked Tomatoes, Squash, and Potatoes: A perfect example of how simple summer cooking can be.
Zucchini (Squash) Cakes: Sure this says zucchini, but the recipe can be made easily with squash.
